What's everyone doing with their green tomato's

We're making refrigerator pickles with our green tomato's and canning them so they'll last longer.
With another batch we are going to make green tomato sweet relish.
The best looking ones are going to be left to ripen.
The tomato's are better looking than anything we got during the summer, too bad they don't have enough time to get good and ripe.

Has anyone else done anything with them?
 
My daughter and I are saving them for ammo in case anyone in the neighborhood is dumb enough to give fruit this year for trick-treat.

Last year we got a box of raisins. Nevermore.

I wish I had a greenhouse. The plants started out great then the drought messed everything up.
After it cooled off the plants made bunches of fruit, beautiful shape and size, just not enough time.
I am going to ripen some indoors but they just don't taste the same.
Just finished up the relish...tastes great from the sampling I did.

Green tomatoes are excellent sliced and fried.

Green tomato mince meat (if you have the equipment and the meat you can add that to the recipe as well), garden relish (green tomatoes, cabbage, onions, peppers), piccalilli (green tomatoes, onions, peppers), French pickles (green tomatoes, onions).

Now those recipes that call for peppers can be varied by using hot peppers instead of sweet peppers, mix'em up and use up those green 'maters.

You might even find a salsa recipe that uses green ones.
 
You can use one of those apple cutters that make six wedges. And then dill them just as you would cucumbers. They are excellent that way.
 
We're ripening them in the greenhouse. Takes several weeks in the cooler weather which is fine. Fresh tomatoes in December are a treat.
 
I never realized there was quite so much one could do with green tomatoes. I tried to vine ripen in the garage, but they all got bit by frost about a week ago.
I like this pickled tomatoes idea...
 
The old timers didn't let much go to waste so there are tons of things they did to preserve or use garden produce. It was a means of survival for many and a way of life for even more.
 
Letting them slowly ripen by sitting on the kitchen counter. Takes a while and taste isn't as good, but you can only eat so many green ones.

Ever notice that you garden fills up with tomato plant next year once you let the tomatoes rot in the garden.
 
Yes, we've had some volunteers and that's great. Also get a lot of volunteer pumpkins and we embrace those too. Seriously, the green tomatoes are so heavy that the wire cages are collapsing and I need to till everything under soon.
 
I made the mistake of planting 5 Beefsteak tomato plants and by late august i was sick of them. I took dozens of them to work and gave the them to people. the Local food bank got some too.
 
The honda just tills them up in the garden for next year. I throw all my fruit and veggie scraps in the garden for tilling. Heck i have a pile of egg shells in there now. Basically anything but the coffee grinds, they are for the hydrangeas.

We're ripening off the last of the green tomatoes in the greenhouse. Have one New Girl plant growing in there too. It has several red tomatoes on it and many green ones. Hope it makes it.
