Had the leftovers this morning with eggs and tortillas. Way good!
 
This is a different kind of chili.
Made with new mexico red chile pods. Basically make a chile paste and slow cook it with chopped flank steak.

Simple, get the New mexico dried chile pods. Usually in most grocery stores in the mexican section. Take pods and slit down the middle and remove stem and seeds. Heat 2 cups water in a pan to almost boiling and rehydrate the chiles for 30 minutes. Put in blender with some garlic, salt and oregano, to taste. Blend very well to liquify the chiles. Cut up some beef, any kind really, i use flank steak. Cook in pan with some oil, with a strainer, strain the blended chiles well. You can skip the straining if blended well enough. Add to beef and simmer covered, low and slow. I usually add more salt to taste and usually some red pepper flake for more spice. The NM chiles aren't real spicy, so you can adjust the heat with red pepper. Serve w flour tortillas. Try it, easy and good!

Sweet thanks Bfunk. I love experimenting with tacos. Made goat tacos recently. Very distinct flavor, but it was great. I will try this one for sure.
