I scored the turkey carcass from my MIL and I picked it clean and pressure cooked it down for the stock. I'll put the stock and extra meat in the freezer for soup in a few weeks.

Fired the oven around 10:00 am, a little windier than I liked.

Dinner rolls put up monkey bread style. These were homemade.

Love turkey pot pie! Never had it from a real wood oven.
 
Love Turkey & Chicken Pot Pie.


Had some leftover turkey from Mom & Dad also (Main dinner for all of us was Thursday at brother & SIL's house 10 miles away,they had a big turkey,everyone else brought some stuff). Shredded the turkey,sauteed a little chopped onion/garlic,few tablespoons of mild chile powder (the no salt added kind),cumin powder,oregano,1/2 cup water & let it simmer 45 minutes. Turkey tacos for Saturday night! Every year I'll make tacos,enchiladas,burritos or turkey noodle soup from the leftover meat. May try a pizza next year for a change.

Fixed that tourtiere you showed recently last Monday night.1 small piece left for breakfast today.>> It was even better a few days later. Thinking about fixing another one when the clan stops by on Christmas Day.
 
I'm on a diet....you guys are killing me!

Are you NUTS!?! Who in the hell starts a diet BEFORE the Holiday season?

I won't even CONSIDER starting a diet before the Holidays.....that'd be pure TORTURE with all the goodies my wife and mom cook up!

Jon, pack some up and send it down here to PA. That looks fantastic, I can smell it through my phone screen!

You're killin' me.
Besides, the drool stains are getting more difficult to get out of the shirts.
Can I have the dinner roll recipe? No, seriously. I want it.
 
Thanks for the comments everyone. Not too many people appreciate this type of cooking. One thing is that the oven looses heat quicker with cold and wind, so I need to adjust cooking times and put the food in sooner this time of year.


To heck with the diets, put on a few pounds and enjoy the holidays season.

Got a SMOKED turkey this year. WIll probably be the first year it is 100% consumed.
 
The heck with the In-laws, you need to roast a turkey in that thing. 'Bout a day and a half would do it. Then invite us all to dinner. Make pies. We will bring beverages. Jeez, what torture--I just peeked at the forums because I was feeling peckish, and it is no where near lunchtime!
