Not a bad unit, maintains temperature setting nicely. Throw a few chips in from time to time and away you go.

What kind of wood are you using?
 
I got a guy to send me some kiawe wood from Hawaii through Craigslist, 5 pounds, supposed to be good on everything. Smoking is my latest obsession to deal with. What do you think about fruit pits? like peach pits, mango pits, etc.? I'm going ask Uncle Google about smoking with mango wood. I like your oven smoker- full temp control, what is your lowest setting?
 
Peach puts have trace amounts of arsenic. I wouldn't use those.
I have seen somebody (Steve Raichlen (sp.)) use wine or other mediums instead of water. I could see that.
