What kind of fittings are people with 1 1/2" or 2" diameter pex using? I have heard there are large bore shark bite fittings available but can't find anything more about them except a video on the shark bite web site...

I have seen a few 1 1/2" fittings but maaaaannnn, are they expensive.....

I used brass barbed to MPT (or FPT) fittings and DOUBLE stainless hose clamps. I got the barbed fittings from Pexsupply.com. Reasonable and effective. I used the PEX for underground. The rest is 1 1/4" copper.

Approved pex fittings for large bore stuff (1-1/4"^) are usually supplied by the manufacturer of the tube itself. I don't know of any that do not require the use of tools specific to a particular manufacturer. Some have used barbed fittings and clamps but I have to say that I have seen "mixed" results with that approach. I probably have about $6,500 invested in tools for 3 different brands of pex. For a number of good reasons I might add.

I used the barbed fittings with 2 stainless clamps for my underground lines. So far so good.

I agree the professionals should have the tools, and it will save them $ in the long run. I do my own warranty repairs ;-) so I could live with the barbed brass fittings. I have 4 total, 2 at each end. So far, no problems over 3 seasons.
