any recommendation on what model to buy, or where to put it on an insert ?
 
I use a digital meat thermometer that the body has a magnet in it. I leave the body of the thermometer on the top of the surround and insert the probe into the outlet air duct. I set the audible alarm for 210 deg. This is for my set up-it took some time to play with it for the set point, ie wood species/air settings and fan speeds. Pretty inexpensive and the battery lasts a long time. Hope this helps.
 
I use a Condar medallion , check your owners manual for proper placement
