I don't know how to test it but I do know that it will be the T1 sensor, which is round that you will have to look at. But is the red over temp light on steady or blinking? If it is blinking that would generally mean a blocked flue or windy out, but if it is on steady that could mean that the fan opening on the bottom of the stove is blocked with dust, lint or pet hair. Just run your hand over the plastic guard and see if it comes up clean. Hopefully this helps.
