Just curious, What do your coals tell you about your fire? When you fire is out, what does the size of your coals tell you about your fire?

Large amounts of charred, unburnt, cold coals tells me the wood ain't dry enough.

Each day I have to remove about a bucket and a half of ash. My old stove used to be much much less with about the same amount of wood and it was usually fine ash. I would call what I have now large but it's definitely chunky.

A bucket and a half of ash is alot of ash. I am thinking you are referring to a bucket and a half of ash & unburnt charcoal/coals? Which is also a lot.
Keep in mind, the old stove you used, if pre-EPA, burnt wood hotter & faster. Older stoves also were not as discriminant to burn only drier wood. They would burn less than seasoned wood easier.
But the pitfalls were higher burn temps, chance of lots of creosote, and actually much more wood usage.
I don't know what stove you now have, but if just starting out with it, give it time. You are basically going to have to relearn how to burn with the new stove, as your burning habits will have to change.
You can always open the air some near the end of the burn to burn the coals down. Pull them forward to the front of the stove and open the air up to burn them off.
If the don't burn off and cool and lay as cold unburnt coals, your wood is too wet yet.

We all went through this after buying the newer type stoves. Don't let it discourage you.
You'll get it down.
