I'm hoping to attach my heat shield directly to the brick hearth above my insert so the mantle is protected. I'll use screw anchors to do the job, but was wondering if I should anchor into the mortar or into the brick. Does it matter?

My inclination would be to anchor into the brick, as this is kiln-fired masonry as compared with the air-cured mortar. I'd think the brick to be more structurally sound and less prone to crumbling/pull-out. But, then again, I'm no mason. Rick

If the mortar is solid and sound, I would go into the mortar.
Should be plenty strong enough to hold the shield.
Mortar can always be filled in if you decide to ever remove the shield, and is easy to repair than a brick cracking or breaking.
