Cooking on my stove

Looking for some advice. This winter for something else to do I would like to try and do some slow cooking on my stove. Mainly just stews and the like that would take most of the day just simmering away. I have a lopi liberty.

So for any of you that have done it any recommendations of do's and donts? What type of pot should I use? Should I use a trivet of some sort? Just looking for all the information before I attempt it.

Heavy pot with lid. Use a trivet or you will make a mess when it boils over. Maybe even consider cooking "inside" the stove when a low coaling stage presents itself.
 
My kids love doing tin foil dinners when there is a nice set of coals. You do need to be careful though, if you get distracted, dinner gets incinerated pretty quickly.
 
We cook nearly every weekend on it in the middle of winter. Usually so.e sort of stew or steaks on a cast skillet on coals inside it. Anything you can cook low n slow on the stove or crock pot is just as easy on 6 our wood stove.

I've found I can just move it around on the stove top to increase or reduce temp. On our Jotul we have a trivet to adjust temp with.

Always keep it less than full and have never (knock on wood) had a boil over.
