Has anyone built one? I am wondering how difficult it would be, my pellet grill has one. I know there is more to a stove than a grill but still. Just thinking out loud here.

I would think you could use a micro-PLC to control a stove as long as you had enough inputs and outputs. Or you could buy a used industrial PLC on e-bay and use a rack for all the I/O you would need. I have Siemens LOGO micro-PLC that I have tinkered with. Software was free. I think McMaster-Carr sells little PLC's. You would have an awful lot of flexibility. Or you could just use a stand alone cycle timer like my buddy uses. It ain't pretty but it's reliable.
