Very interesting. Looks like the cat is doing most of the work. At what stage of the burn was this?

I had just turned the thermostat down (2 on a dial that stops at 3) after charring a reload. I'll take some more as the burn progresses, I'm interested if there is much difference once the wood is all coals.

The burn is a couple hours away from completion, the load is all charcoal now (since 8am EST.) Thermostat is still set to 2 (out of 3.) House temps stable @ 72°F all night (14°F low.)

Interesting outcome. Still have hot spots in the catalyst exit area, but overall stove temperature is more consistent. The firebox can be seen through the openings in the castings, and the temperature appears much more uniform.
My hypothesis is that the thermostat is regulating stove thermal output throughout the burn, regardless of stove top temperature. The catalyst activity and hot spot temperature is dropping, overall stove temperature is higher and more consistent.

Yah, I'd love to get my hands on one for a day or so. I'd shoot all the rooms in the house and then get to work on air sealing/insulating the appropriate spots

It's a Fluke Ti45. Awesome unit, albeit a little clunky in operation. It's a good 6 years old now, resolution isn't up to today's commercial IR standards.
