If I'm not mistaken this was something that was originally done by Native Americans to create landmarks for certain navigational purposes.

Those trees are far too young to have been done for that purpose, but still pretty cool.

IIRC, it is done to the tree when it is a small sapling. The tree is tied down into that shape and permitted to grow. Once it reaches a certain size it tends to keep that shape for the rest of it's life...
 
I think this was done in Europe by the germans, however the technics used and the reason for it were lost.
 
My daughter has a huge black walnut that has a large lowered branch that was shaped like that. It was a marker tree for the spring at the base of the tree.
