He's in error. It's not recommended to put a hearthpad on carpet, but for different reasons. It will crush the carpet pile and a solid floor will provide better weight distribution. Thermal protection is not required. A type one pad will suffice.

The salesman said I need thermal and ember protection because it was going right on carpet.
Your Blaze King does NOT require thermal protection, even on carpeting.

Seems fair if the rough estimate is not way off. That's hard to predict.

Does the price seem fair?

For the stove check this posting: https://www.hearth.com/talk/threads/blaze-king-ashford-30-pricing.142308/#post-1918750
Chimney: Totally depends what brand, how tall, how much class A etc. Without knowing the requirements of your install hard to say.
Similar can be said about the install cost although it does not seem particularly high when they also need to install the chimney.

I agree with BeGreen, the hearth pad is too expensive for an ember protection only stove.

Try Northfield Fireplace in Northfield or Cherry Valley Stoves in Andover.
Don't know which shop you talked too, but I know someone that bought from Cherry Valley...he was VERY impressed with them, just sayin
