what to use for dual temperature display

Looks better than what I have... you want NO/NC contacts (called form C contact). The one i have is only NO, If I had a NC, I would have connect a buzzer with a 9V battery to wake me up when there is a loss of power.

Nop, sorry, it will not read 2 values...
There is a PV value and a SV value. PV mean Process Value (temperature Value) and SV mean Setpoint Value (what you want the process to be)...
This controller will try to control the process for SV=PV.
So if you want only to read 2 value, you need 2x of these, or another product. ( you will probably end with 2x of these, they are cheap... )

2000F is a lot of heat... you will need to choose the temperature probe that connect to the controller carefuly....
