Advice on Slowing Down Burn/Off Gassing

I have the exact same issue with my Super 27 when loading EW with not-so-dry wood. I had some alder that I put in the last row of the woodshed last year and it didn't season properly and I was using it over Christmas. EW definitely extends burn times for me, but I think for me, the problem was when first reloading, there is not enough fire in the stove to pull the air properly into the firebox when loaded EW and the fire just stalls around the 200F stovetop (boiling point of water?). But you have to watch really carefully because once the water does finally boil off, the fire takes off pretty quickly.

I would recommend trying 3 things: a row of NS on the bottom to allow the air to come into the stove more quickly at first, reloading on hotter coals to get the moisture burned off more quickly (but keep a close eye on it!), and also keeping an eye/ear out for when the fire takes off and shutting down fairly quickly at that point.

My stove starts to 'talk' to me when it's heating up quickly (metal pinging, etc), so that's when I start to turn it down.
