Going into my third year now and have not needed any touch up what so ever.
This high temp paint that they use is good stuff & stays on.
If you are doing some touch up just be sure you clean the area before painting.
Should find cleaning info on the paint can.

I have 3 heating seasons with 7X24 burns and notice no unnatural color change in the top. As on any black steel stove the intense black color ages as it is burned and becomes softer. A steel top is a steel top regardless if it is flat or a step top.
 
I can tell you from experience on my old stove that ran away one night, at 1184 degrees the paint goes "poof". But you won't be burning that Quad that hot. That stove had burned for twenty one years and the paint was fine before that weld popped.
