Lag time for CAT probes...?

I stuffed the stove full, all N/S. T-stat was wide open, visible flame in the box, stack probe @about 300F, CAT temp @ less than 400. Bypass open, so most of the heat should have been going straight up, correct? I kneeled down, and the CAT was bright orange-hot! Closed down what I needed to, and CAT probe went to 1000 in about 2 min. SO.... what is the lag time? I don't recall this scenario in "Pen"'s research.
 
I've seen that when I forget to close the bypass. Cat lights off at a relatively low temp and then cat temp shoots up when I close the bypass and kick myself for wasting wood.
 
I figured the probe had delay, sometimes I use the flame shield as an indicator to engage the cat. When the flames start to do the secondary ghost burst on the flame shield I assume it's time to engage.
 
Probe must have a delay. I might have read somewhere that the lag time could be 8-12 minutes. That seems like a long time.
 
My owners manual states that the thermometer has a built-in lag of 4-8 minutes. I found it on page 38...Maintenance section...under thermometer. There is a note in this section that says "Air movement across the top of the stove may provide false reading."
