We make a 85 cubic feet delevery every 13 days all oak split 3-5 inches wide by 14-18 inches long. The pizza makers at the restaurant love to burn it! The pizza is great and only takes 90 seconds to cook. They keep the oven between 700-850 thats cooking!!

My new fav pizza is from a Italian joint downtown in the restored Old Masonic Temple Building. They have a coal-fired oven, its amazing.Temps reported to be 850+ at times. When I was working at the new Welmark/BlueCross Office Tower going up in 2009-10 1 1/2 blocks north, some afternoons when leaving the jobsite if the wind was just right I'd get a whiff of that subtle coal smoke....

That reminds me....pizza sounds good for dinner ;-)
