With all that spray foam insulation I can't see rain nor hail causing much of a noise concern.
You guys have a real beautiful spot there, reminds me of the scenery in the movie SGT. York.
 
this is how I woulda cut. the horizontal black line represents the cut in the roof, the red indicates the flashing, and it's final position. don't pay attention to the outer black square, i haven't use paint in a while.

I would really think long and hard about replacing that roof. For flashing, a silicone boot or this is more what I had in mind, before the storm collar has been installed.

From the pics I just want to say hello to another square foot gardener and I really admire what you are doing with the off grid life style and in some beautiful country as well keep it going....girl
 
I also ripped off a similar metal roof and put a shingle comp roof on. Way better. The noise was bad, the looks are bad, and my old metal roof like yours had the exposed screws. Many of those screws had developed leaks and the leaks are the main reason I ripped off that metal roof. The PO had even tarred many of the screw heads trying to fix the leaky screws. Adding things like chimney flashing properly is also much easier with shingles. I support your decision.

Now I have to read your blog. I love that stuff.

I can't imagine a NC30 in a little 1100 SF home built as well as yours. Seems way oversized but hey, that's better than way undersized.
