I've looked at 2 Earth stove now and they both have what appears to be a 1 inch black iron pipe running up the chimney. What is the purpose of the pipe and can the stove function fine with out it????

You might have better luck posting this in the classic stove forum.

I purchased an Earth Stove last year. Didn't give much attention to this. But while I was welding some seams on it I got wondering this myself. I had an Earth stove over 20 years ago but it was a rear vent and I don't think it had one. It did have the 2 pipes that went up at an angle but no 1" pipe. I hope someone has an answer. I would assume it would be to burn off some residual gasses.
