With deer season over I got back at it today...hauled some wood to the house I cut a couple months back...then cut down 7 nice sized dead locust trees and 3 dead oak trees..gonna work on them Thursday..all this wood will be for 2013-14...then one last deer hunt Saturday.

My 10 year old son killed a spike opening morning..I passed on few smaller bucks...saw one good Buck..he was on the wrong side of the fence ..neighbors land...so I couldn't shoot him...last day I killed a doe(hunters choice here during Buck season on private land)...doe season this week..gonna take the boy hope he kills one(we eat a lot of deer meat)..if he misses ill back him up.
 
Good luck to your son steel. Really great getting the youth involved in hunting. Its muzzleloading and bow season here. I did get a nice 8pt with the bow in October but still lots of standing corn gives the deer a nice food source and hideout.
 
Ohio's overall take is way down, talking 30% and one reason is all the standing corn. I've two in the freezer (one mine and one is a buddy's who won't eat a whole deer) so I'm shooting back-up to my daughter too. I've got two families who will take a deer if I get a couple so that means I get to keep hunting. Good luck to your son!!

Why can't I find anyone out my way who will fill my freezer with deer for me?

I take my game to a local meat processor to be ground. Bulk grind around .20 per pound with a 30 lb minimum. They have the good grinders.
Wife has a small grinder on a kitchen aid, but I'd be forever grinding up the loose meat from a moose. Takes the big grinder a few minutes, & a better grind, then I'm home wrapping.
Just an idea. $40 to $50 & I have good burger.

I see commercial grinders on CL on a pretty regular basis around here. Don't know why, but they show up maybe once a month or so. Had a guy a couple of years ago wanted to trade one for some 6" b-vent I've got in the garage. Quit responding to emails, so I still have the b-vent.
 
I have a porkert hand grinder, i bolt it to a table and I find it works pretty well, I've had it about 10 years and have had good luck with it. I got a buck Saturday and used it last night, made about 20-25 lbs of veniburger. I usually don't make so much burger but he was a decent buck and it's too warm to let him hang for a week or so, that equals tougher meat so I ground a good bit of him.

Mellow, have you ever considered canning the meat? It does change the flavor a bit which makes it even more delicious. A couple of good points about it is that it will keep for years if need be and also you can even eat it cold right out of the can if you want. Makes good sandwiches that way. I like to just heat it in a frying pan with oleo in the pan.


My hunting is done for the year and we too are out cutting wood. Dropped a nasty pin oak today.
 
I have heard canned Deer meat is good, never tried that yet. I got some hot sticks made up this year, even some with cheese. Those are really good. I got a nice 9 pointer on my property, I have not been hunting for many years but now have the bug again big time. I want to get a new bow, put in a food plot, kind of like the wood addiction. Saturday is the last day and there is another nice buck on the property I am hoping my son can get. I think I have it figured out how to move the buck to him after many months of studying their movements. They are some smart, beautiful animals and it can be like a chess game.
 
I can venison and salmon as welll, very good and easy to do. Best tip is use a turkey fryer outside for the heat source. Makes clean up a breeze. :)
 
ohhh yeah canning is the way to go!!! even the shanks go in and when your ready to open a can every piece can be cut with a fork

I bought the 3/4 Kitchener from Northern Tools years ago and grind 100 lbs of venison a year from the deer me and my buddies kill. The Northern grinders are beasts. They have the 1/2 horse stainless on sale now and the plastic housed one is only $99. The stainless ones get great reviews and although made in China, very dependable. Cabelas does have the best ones as far as accessories go. We depend on ground meat all year long and my friends always ask to borrow mine. Instead i tell them to come over with the venison and pork or beef and just bring beer!
 
I think I have to try canning, I'm hoping to get another doe to fill out the freezer, maybe I'll try canning with the next deer.
 
how do u even do u eat canned deer meat?...just open it up and eat it?.....and how long will it last?

I have never canned myself but my uncle does, he adds the canned meat to chili, soups, tacos, stuff like that. You can eat it out of a can or you can use it in recipes
 
Interesting, no one I know does canning, most take it to a butcher and get it in slim jims or packaged out. Anyone have a link to a good site I can read up on canning deer meat?

Btw, thanks for the tips on the grinders, I will check into them as well. I have a nice stainless turkey deep fryer, which peeks my interest in canning.
 
I put moose, potatoes, carrots & a few spices in a quart jar.
Pressure cook for 90 min..
Moose stew ready to eat.
Canned food last several years.
 
After removing all the white stuff we cut the meat into about 1" cubed pieces. We also stuff the meat tight into the cans and add a tablespoon of salt per quart of venison. Then we pressure cook.
 
This thread must be good luck. After posting earlier I went out with the muzzleloader and wouldn't you know I harvested a nice doe. Time to get the canner going again! :)
 
And then the chainsaw right after the canner.
