Is there a high temperature thermostat available that could be used to turn on a fan at higher temps such as 600f? It would be nice to be able to trigger a fan at higher temps, such as when the flue temp gets too high.

Or is it more preferable to instead put the thermostat on a heat shield instead of the flue or stove top? I've seen switches that work at much lower temps....has anyone done this type of thing already? Thanks.

There certainly is. The easiest, if you can find one, would be a snapdisc NO (close on rise) limit thermostat with a closing temperature at the one you want. A quick look found one with a 300F setting for about $10.00. If you can't find one around 600F, you could use a lower setting disc with a slight gap mounting to mimic 600F action.

Alternatively, you could use a digital temperature controller with a K-type probe for the temperature range you want. Most of these can be wired for either NO or NC action. These have either an internal relay or external SSR relay. That would require the probe wire to run from the flue to the location of the controller, and electrical connection (AC or DC) for the controller, along with a mounting box. I use of of these on my gasification boiler, but to turn the draft fan off at flue temp of 250C (482F) and then back on again as the flue temp drops. This prevents over-heating of the flue/boiler. Amazon and Ebay have these readily available in a price range of roughly $10 and up.

I found this White-Rodgers close-on-rise snap disc thermostat with a 350f rating:

It looks like something I could work with. I use double-wall stove pipe so the outer stove pipe wall temperature should be less than the internal pipe temperature. It may work the way I want if I just secure it to the flue pipe but some experimentation will be necessary.
