I have a Century fireplace insert made by Vermont. What exactly do the tubes with holes above the fire do? Should there be a damper in the chimney? What kind of temps should I be looking for at the glass door? Help is appreciated.

Those are the re-burn tubes. Thats where the secondary combustion occurs.

Don't worry about temperature at the glass but do worry about stove top and flue temperature. Get a couple of the magnetic stove thermometers so you can watch what the stove does. The manual should tell what the temperature should be.

Most of the new stoves and inserts do not require a damper in the chimney and they just get in the way when it comes time for chimney cleaning. And if you are new to wood burning, check that chimney often.
