My husband and I have a Grandpa Fisher stove, waiting to be hooked up. Our house is approx. 2000 sq. feet with cathedral ceilings. Our existing stove pipe is 6 inch double wall with 6 inch triple wall metal chimney which was used with our previous wood stove. Can we safely and efficiently use our existing set-up? We also have a propane furnace, however, nothing feels as warm as wood heat. Thanks in advance for your help in this matter.

You "can" safely and efficiently use 6 inch on that stove and many do. However, it is not legal to reduce the flue size smaller than the outlet on any stove. This is from NFPA 211 standard that is a standard adopted into codes nationwide.
The reason for the law is to prevent a restriction in any flue smaller than the appliance outlet.
The reason for the 8 inch outlet on the double door stoves was due to open door burning with screen in place. (Fireplace mode) Smoke roll in was possible with a poor drafting chimney, so they were designed with the larger outlet. Cubic inch area of your firebox area is no larger than the single door Papa Bear stove which has a 6 inch outlet. So it will physically work, but is technically not legal to do so, since it was built with the 8 inch outlet.

A few have even installed baffle plates in the stove connected to 6 inch flues with no smoke roll in problems. The stove is more efficient with the smaller chimney area to heat. You will not get the full BTU wide open with a restricted flue, but that much BTU is not needed in your case.

In Carolina with your chimney, a Mama Bear would be the Fisher of choice. (for many reasons) Northern US, a Papa Bear. Fire viewing with screen in place is the only benefit going to a double door stove.
