I twisted the sections together but I don't seem to get a reassuring "click."

There's no click. You just twist until they meet.
If you're not confident they'll stay together you could use locking bands for assurance.
I didn't use bands and it's been fine through some wicked wind storms.

Is it possible to turn them too far?

No, they will only twist until they meet. Try it, i bet you can twist it too far!!!!! sounds like you are worried they will come apart, USE LOCKING BANDS!!!!! my inspector required me to use them all the way up

What about using sheet metal screws?

i suppose that would work. i would never put screws in something that twist locks together!!! locking bands will be ALOT easier to install and remove if you have to. GO WITH THE BANDS!!!!!
