replacing a ceramic flue

My existing chimney is hand built stone with the top having approx 24" of rectangular ceramic flue out the top. This ceramic flue is weathered and cracked in a few places, having been repaired and resealed at least twice. What is the best way to replace this flue or deal with it. I have a SS liner being installed next week, professionally installed/WETT inspected.

Just chisel the mortar joint and remove the tile and install a new one. Check the actual code but I think the tiles are technically only supposed to protrude 2-3 inches above the crown.
