Storage How do I size hot water storage for my system

My question is: How do i size for enought hot water storage?
I am about to head into year 2 with my EKO 60. My house is about 3800 sq ft, one level, mostly new so new insulation, new windows, radiant floors.
I am interested in saving wood. I Went thru about 8 cord last year Christmas to May 1.
I also want to add solar thermal and not spend any more money on oil in the summer.
I have just found a 1000 gal former propane tank ( submarine style) for cheep.
Is it enough? and if so can anyone point me in the right direction to prep it to use?
