Folks, I was curious what brand and type of thermometer do you use to test your hot convection fan air? Any favorite suppliers? Could one use a cooking thermometer with metal probe?

That's what they used at the sales shop where I bought mine but, with it laying against the bottom side of the tube, you are reading the tube temp more than the air temp. It obviously impresses the customer (I bought two!!!!!) but not a true reading. For my readings, I am using a contact thermometer on the end of a long cable running to an old style analog temperature gauge. It pretty well centers itself in the airstream. Got it from work after they converted to the IR detectors.
