I am thinking about making a different surround for my Buck stove and am wondering about what gauge steel I should use....

Any clue?

16 ga would be plenty, but if you're inclined to over-do things, 14 or 12 would be as high as I'd go.

Our Quad 1200i surround was more like 20ga. It only need to be stiff enough so that it stays flat.
