What is a healthy humidity level for the home when you are using a wood stove? And where should you measure it? Close to the stove or completely opposite of where the stove resides?

30% and when it is really cold outside a little less. Much over that and windows and walls will start having condensation on them.
 
I have humidistats in the center of the first floor and the center of the upstairs. Where we live and breathe.
