What is the function of this?

It is a V.C. 1979 Resolute

I do not know what the function of this is. Does anyone know? It swivels to open and close a small finger sized hole.

That is the secondary air port. Leave it open unless having issues with very strong draft.

PS: The thermometer should be placed on the griddle.
