What temp should i be shooting for?

Hope everyone is keeping safe and warm!

I have a CEMI concept II insert and put a thermometer above the door, what temp should i be shooting for? It seems that the secondaries don't start until around 600-650f and i have reached close to 700 a couple of times which seems really hot.
 
although I am using a stand alone wood stove, and not an insert, I can tell you that my typical temps in the stove during a full burn are around 650ºF, and my flue temps are typically running around 550ºF.
