Where to put thermometer

I have a Jotul 350 Winterport insert. Anyone have this model and if so where is the best place to put a thermometer and what temps should I be looking for? It's new and have only burned a couple of break in fires. I also have access to thermocouple material. Would a thermocouple or two placed strategically be useful? Maybe in the flue itself or atop the insert inside the firebox? Thanks
