And don't laugh at my pink knife. Sharpest, long lasting edge I've ever had on a knife. Ever. My wife bought it at a garage sale for a dime.

Jeff if you had not pointed out it was pink I would not have known and thought it was a shadow but now that I do know......

Black Forest ham. Bacon works, too, but I like ham better

A bit of freshed cracked black pepper on the beef, little bit of everything on top, roll it up and tie it off. You can use a toothpick, but string works better.
I cook it in the crock pot with some tomato juice and beef soup base sprinkled on top. You could do it in the oven, in a single layer, at about 300° for a few hours, covered.
Serve with spaetzle and kraut.

I've never browned it, but I'm sure it wouldn't hurt. I let it go 6-8 hours. I usually use the auto setting, which keeps it on high until it is up to temp, then switches to low. The acids from the pickle and the tomato juice do a pretty good job of breaking the tough meat down, so it doesn't have to cook for a super long time. Ten hours or more doesn't hurt it, though. You can start it before work and it will be fine in the evening.

It's comfort food, you can do what you want with it.

Trying a variation of this tonite,sounds real good! I did not have any toothpicks or string but did have some chalk line. What color should I use? Blue or Red? I used the Blue!:)
