My life was changed forever during my brief time in Texas. Mesquite flavor, brisket, the dry rubs, and most importantly...beef ribs. I know, I know...everyone is about the pork ribs. Dang, I miss the cattle bbqs!

(Thinking of this because the local grass fed beef suppliers are out.)
 
I am going to Ft Worth in October, gonna get my fill.
 
Back in the seventies in Texas when I would have a big cookout my butcher shop would get me whole beef ribs. Everybody called them dinosaur ribs. ;lol I definitely miss the BBQ.

There's a place down in Newburg, NY, Billy Joe's Ribworks - right on the river - that serves those beef ribs, BB. They call em Brontosaurus Ribs. Look like the ribs at the beginning of the Flintsones that Fred orders & when he gets them, they tip his vehicle over. BIG! YUMMY!

I'm thinking of doing a slow-cooked brisket this summer.....maybe in a makeshift brick oven like you've been talkin' about, DB....
All these posts about food get me riled up!!
 
The other day Catherine was watching the PBS BBQ show and they where cooking a beef clod. 18 lb of dry rubbed beef smoking in the biggest weber kettle I've ever seen for 12 hours. Man it looked yummmmmmmm...
