i recently purchased a home that had this stove in it. I’m looking for tips and advise as I have started taking the stove apart and am wanting to rebuild it to use again I have purchased the upper and lower firebacka nd refractory waiting for it to arrive. I’m in the process of removing the old cement and cleaning everything up. What stove cement should I use to put it back together and any information about how I should go about that. I’m all open ears to any information or advise I can get!

In the compulsive research into the 'new' VC stove with open mind, the Defiant/Encore cast plates don't use cement. The plates are gasketed; better and more long term secure than furnace cement. This from the pics in their service manual for rebuilding and repair. May be online for your 2090.

But his stove uses cement.
 
I have been searching a little bit for info on what cement to use and how to remove just haven’t had much luck I also don’t have a manual for the stove so I’m kindof flying by the seat of my pants on this! I believe I am capable of redoing it myself just needing some sort of direction to go. I’m a industrial maintenance mechanic so I’m used to working on things but I want to do this right and get some more life out of the stove any help is appreciated.
 
Rutland stove and furnace cement is a commonly used cement. Follow directions. There's also Hearthstone's stove cement which will do a good job.

Sandblasting is the only way you will get to bare metal. Which will allow you to do a better paint job. The cost of sandblasting:
The average sandblasting company will charge $40 to $65 dollars per hour of labor. Specialty services will cost over $75 per hour.These types of services include extra preparation, special abrasion materials, and job design. Materials cost for sandblasting costs about $50 per 50 pound bag. Most jobs require no more than one bag, but large jobs can use more materials.

It may come out being close to the cost of using a paint stripper and your labor.

I was looking through the manual and the stove uses cement AND gaskets.

Thank that manual answered a lot of my questions on where to cement and gasket Also what order to put it back together I appreciate all the help now just to sandblast and get it cleaned and ready to put back together once I get the parts!
 
Been a while since my last post but to continue on I just had the stove sandblasted and will be going forward with putting it back together. What kind of cement should I use and when I’m done what’s the best brand of paint?

The best cement I’ve used is branded as SBI. I doubt they actually make it, but it has a much better consistency than other brands. It would come from a local stove shop. They may not even have it though..
Stove Bright is a great product and available at stoves shops and online as well. Don’t waste your money on bbq paint from big box stores.
 
I’ve got a defiant encore sitting in my garage. It only needs a cat and paint. It could be bought for the price of just your sandblasting I’d bet! Do you have some attachment to this particular stove? That’s a lot of time and money.
