Speaking of bread ... wife and I decided to make some bread, doughnuts, and pretzel buns. Under the wood stove as a proof area. Worked great! Delicious homemade products made in just a few hours.

Supper for the next few nights. 4 bell peppers, 1 bulb of anise, 1 yellow onion with some other things.

Pork Ribs - Simple no work, oven at 225F, 6 hours, plain dry rub. Could add sauce, and bake another hour, but I just had dry.
Used THE KEG pork and chicken rub.

We have a Winter Storm Warning on with a possible 10-16 inches of snow with wind gust up to 35 mph. I figured it was a good day to make soup so I did.

I ate the rest of the stew the wife made earlier this week so I'll have some of this tomorrow.

Not much snow so far but it's suppose to snow until 9 tomorrow night. I ended up having soup tonight for supper, the wife loved it so that's good enough for me.
 
Just out of the oven - much better than the other week when I forgot to bake it. I finally remembered at bedtime. That last loaf had risen and fallen
to a paddy. I baked it anyway, and as my punishment for being forgetful, ate it. Reminded me of the days when I was a kid making home made pizza from scratch.

This year the turkey brine is especially pretty.
Water
Cranberry Cocktail
4 orange peels
Peppercorns
Bayleaves
Herb bouquet
Head of garlic halved
1.5 cups of salt, and about the same amount of brown sugar.

Warming on the stove to dissolve the salt, sugar and marry the flavors. Smells are free. Oh, wait…you can’t.

225F for 8 hours
Good thing I put about 100 bags of pellets in the garage this afternoon. I don't usually eat white rice, but once or twice a year is OK I guess.

For about a month I've been cooking soups, this week I cooked cream of celery and cream of cauliflower that's in the pictures. I received a cordless immersion blender for an early Christmas present, I used it on both soups this week.

For about a month I've been cooking soups, this week I cooked cream of celery and cream of cauliflower that's in the pictures. I received a cordless immersion blender for an early Christmas present, I used it on both soups this week.
I remember cooking up big batches of soup myself. Day one was starting the stock. Day 2 was making the soup. Day 3 was trying to get it all in containers and in the fridge or freezer. I remember using every container in the house as well as mixing bowls. Winter is an excellent time as the stove is going all the time, then to cold crash the stock and soup, you just put it outside with the lid tied down.
 
Bean Soup is on the agenda for tomorrow. I have a left over ham hock that's ready to go. Might start today, If I can get really motivated.

Got back into baking with the cold weather. Banana bread came out of the oven during the week. Last night I made dough for pizza. I didn’t have any hard white wheat berries, so I had to improvise.

I had 1 cup of hard red left. I used 1 cup of emmer, which is supposed to be quasi hard, and a cup of spelt. I needed to use hard berries for the gluten/yeast. It makes the dough for 3 pizzas. It wasn’t bad. The dough had a nutty flavor. The kid felt there was too many toppings. She didn’t want to make it though. If she’s going to be picky, she’s going to have to put the sauce, cheese, and toppings on to her tastes.

I put in an order with Azure for more berries.

25lbs of hard red
25lbs of hard white
5lbs yellow corn for cornbread
And 2.5lbs of multi colored popcorn since it looks fun! It might make it into cornbread too, lol.

Yes, it’s not the most used berry, but it finds its way into stuff. It’s a soft wheat, so it goes into breads without yeast. The 64oz mason jars are so handy for storage!

My bean soup has been postponed until Thursday due to a lack of needed ingredients. Grocery run on Wednesday. It's ok though, making chili instead.
