Fan shut down

Why does it take so long for the fan to shut down after I turn my p_43 stove off?

convection fan?

If so because it don't shut down till the heat exchanger cools off.
 
and if you mean combustion fan, it's because the esp has to cool down to a pre-set temperature (90*) before it shuts off. The stove wants to make sure that there is absolutely no fire left in the burnpot before shutting down.
