The manual specifically says you can switch at anytime from the manual to auto settings, but doesn't mention whether you can switch from Room Temp to Stove Temp or vice versa, while in operation.

I have done so without any problems. However, I first turned it off and waited about 30 seconds before switching to the other mode.

I am not sure if you can switch while still running or not, so I
always turn off the stove for a few before switching modes.
Kinda like giving it a chance to reset itself.

There is no problem switching as you described. I agree with tinlabranc that you should stop in the "OFF" positon for a few seconds just to clear its little head.
