I couldn't understand why I never had a stove top temp over 550 F (even with 2 burn indicators on the stove top). I also have a Condar Fluegard Thermo which always reads way higher temps than the stove thermos. Well, after buying an IR thermo, I learned that the Rutland one's must be off just a tad.
 
What were the readings? How far off?
 
Your fluegard probe will read roughly double the exterior temps since it's reading the hot internal flue gases.

I would have to compare them a few more times to be sure (haven't burned much this year yet due to the warm weather), but I think they are at least 150 degrees apart (Rutland 350, IR 500).
 
I rechecked the readings today and I learned that they vary greatly over small distances. The Rutland readings were pretty accurate compared with the IR .
