Pipe damper question

My Esse cook stove has a built in pipe damper, plus a by pass for the oven. My question,,,,will my chimney stay cleaner with the damper closed or with it open? With the damper close, flue gas temps stay about 300. Pipe stayed very clean last year.
 
Sounds like whatever you did last year is the right way to go! Gotta love that cook stove.
