snap disc keeps going bad

any ideas, I've put 3 snap discs in my stove. The low limit disc closes as it should around 140f but doesnt open again until after the stove has cooled down for an hour or so you can hear it snap open. Should I use a ceramic version?
 
I am pretty sure they don't open until it hits 120ºF. I would check the temp where its mounted to. If its colder the disc may be sticking? But I would bet its still over 120ºF.

Does the fan stay on until it actually opens?
 
Get a ceramic one, the others can deform and not operate properly because of the high temperatures in the area they normally are mounted.
