I am a little confused about what happens at the ceiling line of a straight through cathedral ceiling install.
I have the cathedral ceiling support, stove pipe adapter, chimney adapter . Looking at the support box , it says for a 3/12 pitch I need 1" or more of insulated chimney into the room if I use double wall in the house. Single wall requires more of course. How do you cover the shiny stainless of class A if it has to be into the house ?

Is this Supervent chimney pipe? It depends on the brand of pipe but for many companies the class A pipe fits to a collar inside support boxes so all you see is the transition flange supporting the pipe. If the chimney is clamped and it projects into the room it could be painted with stove paint.
