Does Hackberry change color?

I was curious if it changes color when it dries? The stack I have looks the same as it did 5 months ago. All the wood around it changed color drastically over the months.
 
I've got a lot of it and it tends to turn gray after a year or so, but when I dig down into the stack it still stays pretty much white to light tan
 
The change in color is due to UV exposure from sunlight. Maybe the Hackberry gets more shade than the rest? Or it is more resistant to the sunlight. In any case, color has little to do with the dryness of the wood.
 
mine has stayed white to gray. Only been splitting it this spring though.
