I am looking at purchasing a Dutchwest Federal wood stove. The problem I have is the pipe coming out of the stove is 8 inch and the flue opening at the chimney is 7 inch. The old stove is a 6 inch with an expander to fit into the 7 inch opening. Will this cause me any problems going from 8 down to 7?

Per NFPA 211 you're not supposed to decrease the flu size..
But I have gotten away with going from a 7" to a 6".. I think rule of thumb is one size may be OK, two sizes you will have problems..
Cross sectional area comparision:
6" = 28.3sq inches
7" = 38.5sq inches
8" = 50.2sq inches
= loss of ~25% flu size per 1" diameter change..
