there's probably alot of proprietary info in there.
Just like say a Ford computer or any other manufacturer's computer they'll give you pin outs but they're not gonna tell you how it works.
 
Like GVA said, they probably want to keep that confidential.

If I were to speculate, I would imagine that there is not much on the control board, maybe some signal conditioning and an 8 bit micro. The code (of course) would be the key.

Given the nature of the product, they may not want to let any info out for liability reasons. That is, they may not want anyone trying to repair or modify a controller, for fear of the effects of a runaway stove.
