Hm, I was surprised by the moisture barrier on the inside of the studs and insulation. If one does spray foam it would be on the concrete behind the studs.

I actually found that video earlier. It's tough to find any availability on that product in the northeast. I will keep looking, would certainly be interested in using it. He hammers a nail into the concrete? Seems better than tapcon fastener into concrete I suppose.
IMHO - Rockwool boards are a nice insulation system but in general rock wool is dusty. Fine for a non used space like an attic but you may regret not covering it in space that gets occasional use.
