I am thinking about replacing the pipe from my pellet stove to the wall. Is this a hard thing to do for a novice?

In short no. If you have basic handyman skills you can handle it no problem. Do it yourself and save. I think you would be hard pressed to get someone to do it, not enough money in it for the vultures. Just my opinion.
