Stealing oil heat to protect EKO

I want to protect the EKO from freezing should we leave the house during the heating months for any length of time. I was thinking of using this aquastat wired to the EKO circ. Would this work (stealing a little heat from the house and the oil boiler ?

Honeywell L4006A1959 - High or Low Limit Aquastat, 40-180°F range, 2°F Differential

As long as your oil fired unit works when called upon. Ouch if it doesn't. I would want to add another fail safe such as an electric baseboard right next to the boiler. That is if you have power when its needed.
